Vegan Thanksgiving Dressing

This recipe is not only vegan but gluten-free and has no processed oils.

  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 (12 oz) package sliced mushrooms
  • 2 cups wild rice
  • 2 cups brown rice
  • 2 cups onions
  • 8 cups plus 2 tablespoons of veggie broth
  • 2 teaspoons sage
  • 1 teaspoon thyme
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon rosemary
  • salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Saute onion, celery, carrots, and mushroom in 2 tablespoons of veggie broth until they begin to brown, around 10 minutes. Add in the wild rice, brown rice, veggie broth, and spices.  Bring to a boil and then reduce to a simmer for 45 minutes. Before serving, mix in the freshly chopped parsley.  Enjoy! Makes 8-10 servings.
