Kale Salad

  • Kale1 bunch fresh kale, washed and finely chopped
  • 1/4 c red onion, thinly sliced
  • 1 carrot, thinly sliced
  • 1 stalk celery, thinly sliced
  • 1/2 avocado, cubed
  • 1/4 c dried cranberries
  • toasted sunflower seeds, almonds or pine nuts
  • 1/2 c chick peas or sprouted mung beans
  • lemon juice and olive oil to taste
  • sea salt
  • pepper

Mix everything together; stores well and kale will tenderize if left overnight in refrigerator.
