Carrot + Cashew Salad

Ingredients: 

4 large carrots, grated
1/2 cup cashews, coursely chopped
(can substitute with walnuts or pepitas)
2 green onions, thinly sliced
3 TB ginger, freshly minced
3 TB cilantro, chopped
2 TB walnut or extra virgin olive oil
4 TB lime juice, freshly squeezed
Salt + freshly cracked pepper to taste

Directions: 

In a large bowl, combine carrots, cashews, onions, ginger and cilantro. Stir with fork until evenly mixed. Add oil, lime juice, salt, pepper and stir gently to combine.
