Power Salad PDF Print E-mail

Makes 2 main-dish salads
  • 2 ears corn, kernels cut from cob
  • 6 radishes, sliced
  • 2 green onions, sliced
  • 1 avocado, ripe, diced
  • 10 cherry tomatoes, halved
  • 12 slices cucumber
  • 2 Tablespoons hempseeds
  • 4 cups lettuce or baby spinach

Dressing

  • juice of 1 lemon
  • ¼ - ½ cup extra-virgin olive oil
  • sea salt and fresh ground pepper

To assemble

1.Place 2 cups lettuce on each plate.
2.Top with corn, radishes, onion, avocado, tomatoes, cucumber.
3.Sprinkle with hemp seeds and drizzle over with the dressing.
4.Sprinkle salads with sea salt, fresh black pepper and drizzle with olive oil and lemonjuice.
