Serves 3-4
Sauce:
- 1 large tomato, quartered
- 1 cup sliced carrots
- 1/4 medium red onion
- 8 soft dates
- 1 ounce (about 3/4 cup) sun-dried tomatoes
- 2 TBS fresh lime juice
- 1 1/2 – 2 TBS Nama Shoyu
- 2 TBS olive oil
- 1/3-inch piece ginger
- 1 medium clove garlic
- 2 slivers of seeded red pepper
Veggies:
- 6 small shitake mushrooms, sliced
- 1/2 large red bell pepper, sliced
- 16 snow peas, chopped
- 4 leaves of bok choy, slivered
- 1 large slice fresh pineapple, chopped
- 1 ear of corn, cut off the cob
1.Puree the sauce ingredients in a vitamix or blender. Toss the veggies with the sauce and serve.
