Sweet and Sour Veggies PDF Print E-mail

Serves 3-4 Image

Sauce:

  • 1 large tomato, quartered
  • 1 cup sliced carrots
  • 1/4 medium red onion
  • 8 soft dates
  • 1 ounce (about 3/4 cup) sun-dried tomatoes
  • 2 TBS fresh lime juice
  • 1 1/2 – 2 TBS Nama Shoyu
  • 2 TBS olive oil
  • 1/3-inch piece ginger
  • 1 medium clove garlic
  • 2 slivers of seeded red pepper
Veggies:
  • 6 small shitake mushrooms, sliced
  • 1/2 large red bell pepper, sliced
  • 16 snow peas, chopped
  • 4 leaves of bok choy, slivered
  • 1 large slice fresh pineapple, chopped
  • 1 ear of corn, cut off the cob
1.Puree the sauce ingredients in a vitamix or blender. Toss the veggies with the sauce and serve.
