Good ole' stuffing. What would Thanksgiving and the holidays be without it? This Thanksgiving my friend Charity and I made a dish that we call "raw stuff." It looks like stuffing, but it's just a tasty melange of vegetables. The ingredients are something like the following:
Serves a lot - plus leftovers
- 2 stalks celery (with leaves) - shredded
- 1.5 parsnips - chopped
- 3-4 small carrots - shredded
- 1/3 large golden beet - cubed
- 1 medium apple - chopped
- 2-3 tbl. fresh rosemary - finely chopped
- handful of pecans - broken into medium-sized chunks
- 1/4-1/2 cup plumped raisins (optional)
- 1 small head cauliflower
- juice of 3 oranges
- some tahini
- 2 tbl. fresh grated ginger
- I think Charity added some lime juice for good will (she's like that)
In a large mixing bowl, mix the first 8 ngredients plus whatever else you feel like putting in there (maybe some fresh sage?).
Shred the cauliflower in a food processor with the S-blade.
Mix the orange juice with enough tahini to make it thick.
Add the orange juice/tahini mixture and the ginger in the cauliflower and process until evenly mixed.
Combine all the ingredients and mix together. Serve.
