Ingredients
- 1 bunch broccoli rabe, trimmed and chopped
- 10 cloves of garlic, minced
- 12 oz orechiette, large shells or bowties pasta
- ¼ cup extra virgin olive oil
- sea salt
Directions
Heat olive oil in a frying pan on medium heat.
Once oil is heated, add garlic, constantly stirring
until garlic is just starting to brown – about 1
minute. Remove from heat.
Boil water in large pot
Once water boils, add teaspoon of sea salt to water,
then add pasta. Do NOT add oil to water. (Oil in water
will prevent sauce from sticking to pasta.)
Cook pasta for about 5-6 minutes, then add broccoli
rabe and cook until pasta is firm to bite – about 2-3
minutes. Drain and transfer to large serving bowl.
Pour garlic sauce over it. Add sea salt, pepper, and
red pepper flakes (optional) to taste.
